This is called BRUISING. It usually occurs after soaking or handling the
cake.
(Thanks for the Pics JB!) Best thing to do is watch it closely and make sure it does not get 'FUZZY'. That would be a good indication of GREEN MOLD.
Dear Keeper I was just thinking about something that may help your wording about casing and any other sections that involve handling or especially breaking up of the cakes. My friend saw such a dramatic change in color when he decided to try and break up the first cake, it was amazing the color change how blue it became so quickly, and with inexperience and lack of resources, he immediately came to think he had contaminated the entire cake! Little did he know that the cake was simply bruised, and he decided to keep it for a few days in a zippy, he thought it was done for, but then it slowly turned back to white, just goes to show you how amazing mycelium really is, the color is similar to navy blue cars. very dark, very noticeable.
